It is wrapped in proscuttio and served with a herb and parmesan cous cous cake baked in the oven. I added some wein sauerkraut as that is great with pork. You make a jus from the juices. Delicious and definitely one to do again. Of course some nice red wine courtesy of Paul did not go astray.
